I had to give the matter a lot of thought last year for the book I was asked to write - <em>Happy Mealtimes For Kids</em>. Here are a few suggestions, some old favourites and some new. There are also pitta breads, bagels, English muffins, naans, chapattis, tortilla wraps, fajitas and croissants, all of which can be used to make a delicious picnic lunch.</p><p>Filling suggestions include: cold meats - chicken, ham, pork, beef, bacon, salami, sausage, shaved Italian antipasto meats, chorizo and other Spanish cured sausages. Cheeses - can be sliced or grated Cheddar, Edam or any hard cheese; cream or cottage cheese, mozzarella, and cheese spreads. A fish filling could be taramasalata, wafer-thin smoked salmon, prawn cocktail, crab or fish paste. Egg fillings can be hard-boiled and sliced, scrambled, or chopped and mixed with a little salt and pepper, or mayonnaise, chives, dill, onions, tomatoes, cress, chutney, tomato or brown sauce, salad cream or even a little curry powder or soy sauce.</p><p>Add salad to any of the above for variety and extra minerals and vitamins. Choices could include: sliced or chopped tomato, cucumber, celery, red, green, orange or yellow pepper; lettuce, coleslaw, grated carrot. Add a little chutney, mayonnaise, tomato sauce, brown sauce or mustard if your child likes it.</p><p>Pots: I use the term ‘pot’ for the little airtight containers that can be filled with anything from a main meal to fruit and are idea for picnics as well as packed lunches. Try: chopped tomato and sweetcorn; chopped celery and grated cheese; diced cucumber and tinned kidney beans; tomato, yellow pepper and pineapple; cucumber, chives and sweetcorn. Or add a little rice, couscous or pasta to the salad. The combinations are endless and the bright colours and variety make for an interesting and attractive salad pot.</p><p>My family’s favourite pots include: diced cheese and pineapple; sliced cold cooked sausage and apple; chopped ham and cucumber; chopped peppers and feta cheese; chopped hard-boiled egg and tomato; grated cheese and coleslaw.</p><p>Other savoury suggestions for picnics include sausage rolls or vegetarian equivalent; samosa, onion bhaji, pakora; slice of pizza or quiche; cheese puff, spring roll or Scotch egg; breaded chicken or chicken goujons; mini Cornish pasties or mini pork pies.</p><p>Desserts: Use a little pot for dried or diced fresh fruit. Or take a yoghurt, jelly or fromage frais, cold custard, rice pudding or semolina as long as you can keep then cool. If a child rejects the food we have lovingly prepared then it is easy to feel they are rejecting us. Many of the children I’ve fostered have come to me with some form of ‘eating disorder’: refusing to eat, eating the smallest of amounts, eating only sweet foods, or gorging or binging until they are physically sick. Based on training, research for my book Happy Mealtimes For Kids, and over 25 years of fostering experience, I’ve put together some guidelines that can help achieve healthy eating.</div> <!-- END OUTPUT from 'themes/contrib/bootstrap/templates/field/field.html.twig' --> <!-- THEME DEBUG --> <!-- THEME HOOK: 'field' --> <!-- FILE NAME SUGGESTIONS: * field--node--body--blog.html.twig * field--node--body.html.twig * field--node--blog.html.twig * field--body.html.twig * field--text-with-summary.html.twig x field.html.twig --> <!-- BEGIN OUTPUT from 'themes/contrib/bootstrap/templates/field/field.html.twig' --> <div class="field field--name-body field--type-text-with-summary field--label-hidden field--item"><p><strong>Expect your child to eat</strong></p> <p>As we expect good behaviour from our children so we should expect them to eat – at the table and the same food as other family members.</p> <p><strong>Set a good example</strong></p> <p>You can’t expect a child to eat heartily, healthily and happily if you are sitting there picking at your food and claiming you are on a diet. Start early: If good eating practices are established early in childhood, a child is far less likely to develop eating difficulties later.</p> <p><strong>Encourage children to feed themselves</strong></p> <p>A child is far less likely to reject food if they are feeding themselves rather than having food pushed into their mouth</p> <p><strong>Check nothing is worrying the child</strong></p> <p>If a child suddenly starts to refuse food, make sure there is nothing worrying them. Worries can take away a child’s appetite just as they can an adult’s.</p> <p><strong>Give suitable-sized portions</strong></p> <p>Children’s stomachs are a lot smaller than adults’ so they feel full sooner. Give a suitable sized portion; they can always have seconds. Keep meals simple: especially with young children. If a child has too many different foods on their plate (or too much), they may take the easiest solution and eat nothing.</p> <p><strong>Limit snacking</strong></p> <p>While a little snack mid-morning or mid-afternoon will sustain a child’s energy levels between meals, too many, too large or very sweet snacks will dramatically reduce a child’s appetite at the meal table.</p> <p><strong>Never use food for punishment</strong></p> <figure> <blockquote> <p><br /> You’ll go to your room without any tea.</p> </blockquote> </figure> <p>And try not to bribe children with sweet things tempting though it can be at times:</p> <figure> <blockquote> <p><br /> When you’ve done your reading/homework/piano practice you can have a chocolate bar.</p> </blockquote> </figure> <p><strong>Be firm</strong></p> <p>A parent or carer may have to be firm with a child if they are refusing to eat or not eating enough for their needs. If necessary, allow the child extra time to eat, but don’t leave them isolated at the table.</p> <p><strong>Genuine dislikes</strong></p> <p>All children have food preferences and a few dislikes are acceptable, but refusing to eat all nutritious food is not.</p> <p><strong>Control</strong></p> <p>Food refusal can be a way of controlling a parent or carer. You will find that a child who is using food as a means of control will like something one day and reject it another.</p> <p><strong>Common sense</strong></p> <p>Don’t worry if the child doesn’t want to eat one day or eats very little. A child’s body usually regulates its food intake and that can vary from day to day. If the child refuses food assume it will pass and the child will be eating normally in the morning and in most cases that is what will happen.</p> <p>I hope this helps. That is to say, the food we eat is absorbed by our bodies and therefore becomes part of us. But it is not only our bodies and our physical health that is affected by what we eat, but also our brains and central nervous system. While researching my book Happy Mealtimes For Kids, I learnt a lot. I thought I might share some of this with you.</div> <!-- END OUTPUT from 'themes/contrib/bootstrap/templates/field/field.html.twig' --> <!-- THEME DEBUG --> <!-- THEME HOOK: 'field' --> <!-- FILE NAME SUGGESTIONS: * field--node--body--blog.html.twig * field--node--body.html.twig * field--node--blog.html.twig * field--body.html.twig * field--text-with-summary.html.twig x field.html.twig --> <!-- BEGIN OUTPUT from 'themes/contrib/bootstrap/templates/field/field.html.twig' --> <div class="field field--name-body field--type-text-with-summary field--label-hidden field--item"><p>​<strong>Fluid:</strong> The human body is 63 % water, and the brain 77 %. Drinking regularly, and keeping the body and brain hydrated, is absolutely essential to function effectively. By the time a child is thirsty they are already dehydrated, and even mild dehydration can cause headaches, tiredness, loss of concentration and irritability. Trials have shown that if children take a bottle of water into school, and are encouraged to drink at regular intervals during the day, there isn’t the dip in concentration and learning that is often experienced in late morning and afternoon.</p> <p><strong>Hidden caffeine:</strong> Although we are unlikely to give a child a cup of strong black coffee, the equivalent amount of caffeine can be found in a can of many fizzy drinks. Caffeine is a powerful stimulant and acts immediately on the central nervous system, giving a powerful but short-lived high. Studies have shown that even children who are not prone to ADHD can become hyperactive, lose concentration, suffer from insomnia and have challenging behaviour when caffeine-laden fizzy drinks are added to their diets.</p> <p><strong>Sugar:</strong> Sugar can affect a child’s mood and behaviour. Most parents and carers have observed the ‘high’ that too many sweet foods or sugary drinks can have on a child – even the average child without a hyperactivity disorder. As sugar enters the blood stream it gives a surge of energy, but after the ‘sugar rush’ comes a low as the body dispenses insulin to stabilize itself. The child can then become tired, irritable and even aggressive, with a craving for something sweet. Dieticians therefore advise that that sugar intake should be moderated and ideally come from a natural source – i.e. fruit.</p> <p><strong>Vitamins and minerals</strong> are essential not only for growth and health but for behaviour and emotional stability. <strong>Zinc</strong> is essential for good brain functioning: a deficiency can result in learning difficulties and behavioural problems, including mood swings and tantrums. Zinc is found in meat, shellfish, milk, cheese, bread and cereal. <strong>Magnesium</strong> described as a natural tranquilizer, and a deficiency can aggravate ADHD, causing restlessness and poor concentration. Magnesium occurs naturally in green leafy vegetables, nuts and pulses, bread, fish, meat and dairy produce. <strong>B vitamins</strong> are crucial for the brain and nervous system to function properly. Deficiency in the B vitamins can impair the functioning of the brain and nervous system, resulting in poor learning and memory recall, aggression and depression. B vitamins are found in meat, cod, salmon, bread, cereals, rice, eggs, vegetables, soya beans, nuts, and potatoes, dairy products, and some cereals.</p> <p><strong>Iron</strong> is very important because it helps the body to make haemoglobin which carries oxygen around the body. It has a direct effect on cognitive development, energy level and work performance. Iron deficiency has been found in high numbers of children with ADHD. Studies have shown that boosting iron levels increases concentration and school performance as well as improving behaviour. Iron is found in red meat, beans, nuts, dried fruit, whole grains (such as brown rice), fortified breakfast cereals, soya, most dark green leafy vegetables and chocolate.</p> <p><strong>Omega-3 oils</strong> (good fats) are essential for normal growth and development, including brain functioning. Deficiencies have been linked to poor memory and concentration, mood swings, depression, aggression and hyperactivity.&nbsp;Omega-3 oils are found in oily fish, for example fresh tuna, salmon, trout, mackerel, herring, sardines and pilchards, but can be taken effectively and safely as a supplement. There is now compelling evidence that adding omega-3 to a child’s diet can boost intelligence and learning, as well as stabilizing ADHD.
